Avocado Bacon Egg Salad

If you have a few hardboiled eggs left over; they tend to sit around because no one really knows what to do with them. We have a savory answer that makes the best clean-eating egg salad. No mayo, no chemicals. Swapping out the mayonnaise for avocado has a lot of benefits. It can help stabilize blood sugar, is anti-inflammatory and supports cardiovascular health, for starters.

As for eggs, they previously had a bad rap, but don’t skip them. They contain lots of healthy nutrients, and many of them are more concentrated in the yolk. Pasture-raised eggs have omega-3s, vitamin D and all B vitamins to keep your energy up. Plus, the egg whites are full of protein. Avocado Bacon Egg Salad

  • 1 avocado, pitted and chopped
  • 2 boiled eggs, chopped
  • 1 medium-sized tomato, chopped
  • Juice from one lemon wedge
  • 2 strips uncured bacon, cooked and crumbled
  • Salt and pepper (optional)

Lightly mash the avocado chunks and mix with the chopped eggs, tomato, lemon juice and bacon crumbles. Taste and add salt and pepper if desired.
