Cinco de Mayo blender salsas

Using fresh ingredients will give an antioxidant and anti-inflammatory boost to these recipes. In addition, it helps you avoid preservatives and mystery ingredients. Tomatoes have lycopene and tomatillos carry a different, but also highly beneficial, antioxidant called withanolides. It may be hard to pronounce, but just know that they have anti-bacterial and anti-cancer properties.

Fresh tomato salsa
- 1 red onion quartered
- 3 cloves of garlic, pressed
- 1 Serrano pepper, seeded and rough chopped
- 1/2 cup cilantro, picked off stems
- 2 pounds ripe Roma tomatoes, chopped and seeded
- Lime juice, to taste
- Salt and pepper, to taste
In a strainer, run chopped onions under cold water to take away the bite. Add onions, garlic, Serrano pepper and cilantro to blender and pulse. When thoroughly blended add a couple handfuls of tomato at a time until all is added and blended. Pour into bowl and mix in lime juice, salt and pepper to taste. Store in fridge for up to three days.
- 2 pounds tomatillos, husked and quartered
- 1 jalapeño, sliced and seeded
- 1 clove garlic, pressed
- 1 cup fresh cilantro, picked off stems
- Salt to taste
Add tomatillos, jalapeño, garlic and cilantro to blender and pulse until smooth. Add salt to taste. Stays fresh in the fridge for up to three days.
