Healthy zucchini bread

Looking for something tasty and good to share with friends and neighbors? Zucchini bread is a healthy and sweet way to sneak in a secret serving of veggies. The combination of zucchini and applesauce help to keep the bread moist. It’s good for a quick breakfast or dessert with a cup of green tea.

This version is a “better-for-you” bread. Although it does have a bit of sugar, it is much less than other recipes. The whole wheat flour and zucchini keep the recipe high in fiber. The walnuts add omega-3s and help keep energy levels up.  Try our zucchini bread and share it with a friend.

Healthy zucchini bread

  • 1 1/2 cups whole wheat pastry flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly grated nutmeg
  • 1 teaspoon ground cinnamon
  • 1 egg
  • 1/3 cup unsweetened applesauce
  • 1/4 cup expeller pressed  coconut oil
  • 3/4 cup sugar
  • 2 tablespoons nonfat plain yogurt
  • 2 teaspoons vanilla extract
  • 1 cup grated zucchini
  • 1/3 cup chopped walnuts

Set oven to preheat at 325°. Rub an 8-by-4-inch loaf pan with coconut oil or olive oil cooking spray.

Sift flour, baking powder, baking soda, salt, nutmeg and cinnamon in a medium mixing bowl. In a larger separate mixing bowl beat egg, applesauce, oil, sugar, yogurt, and vanilla. Add dry mixture to the larger bowl in small amounts until it is combined and mixed. Stir in zucchini and walnuts gently then pour batter into the loaf pan. Bake for 50 minutes to an hour. The bread loaf should be golden brown. To test for doneness, insert a toothpick near the middle. If it’s done, it will come out clean.

Let the loaf cool in the pan for 30 minutes and then remove and allow loaf to finish cooling on a rack.
